This is our proud dish, made by marinating Nagoya Cochin neck skin in a secret sauce and grilling it over charcoal until it is fragrant.Nagoya Cochin is one of Japan's three great local chickens, along with Hinai Jidori and Satsuma Jidori, and is known for its deep flavor and richness.The crispy texture and rich flavor of the sauce are perfectly intertwined, and the more you chew, the more delicious the chicken becomes.It also goes great with alcohol.
